Digital Cameras
Do we have any Photography / Digital Camera Buffs on the board?...If so, which 8MP+ Camera would you recommend and why?

Well firstly, you should select the media it records onto. CF and SD are probably the best, CF isn't really speed limited, but SD is.
Then choose your resolution. You've done that.
Next, I'd go for maximum optical zoom (at least 5x), minimum light level required, and speed of autofocus.
Will that do you? It's been a year since I bought mine, but went for a Pentax. 7MP, 5x zoom, SD. And in a metal case too, so it's more sturdy than the plastic ones.

I see.....what are the pics like from them?...I was looking at the Canon S70 and S80 and also the Sony Cybershot.
I would prbably go with CF as my Canon Ixus was also CF and did the job...
